Cherry-Vanilla Compote

Yield: ~1½–2 cups | Time: ~20 minutes

Ingredients

  • 1 lb cherries, pitted (halved if large)
  • ½ cup sugar
  • 2 Tbsp water
  • ½ tsp sea salt
  • 1–2 tsp lemon juice (to finish)
  • 1 tsp vanilla extract or ½ vanilla bean (seeds scraped)

Method

  1. Add cherries, sugar, water, and salt to a saucepan over medium heat.
  2. Bring to a gentle simmer; cook 10–15 minutes, stirring occasionally, until glossy and spoonable.
  3. Remove from heat. Stir in lemon juice and vanilla. Cool.

Sweetener swaps: honey (use ~6 Tbsp), maple syrup (use ~⅓–½ cup). If using liquid sweeteners, reduce added water.
