Cherry-Vanilla Compote
Yield: ~1½–2 cups | Time: ~20 minutes
Ingredients
- 1 lb cherries, pitted (halved if large)
- ½ cup sugar
- 2 Tbsp water
- ½ tsp sea salt
- 1–2 tsp lemon juice (to finish)
- 1 tsp vanilla extract or ½ vanilla bean (seeds scraped)
Method
- Add cherries, sugar, water, and salt to a saucepan over medium heat.
- Bring to a gentle simmer; cook 10–15 minutes, stirring occasionally, until glossy and spoonable.
- Remove from heat. Stir in lemon juice and vanilla. Cool.
Sweetener swaps: honey (use ~6 Tbsp), maple syrup (use ~⅓–½ cup). If using liquid sweeteners, reduce added water.
