
Capture the Season
Plum Cranberry – Compote
Yield: ~1½–2 cups | Time: ~20 minutes
Ingredients
- 1 lb plums, pitted and sliced thin with skin on
- ½ cup honey
- 1 cup dried cranberries
- 2 Tbsp lemon juice
- ½ tsp sea salt
- 1 tsp vanilla extract or ½ vanilla bean (seeds scraped)
Method
- Add plums, honey, cranberries, lemon juice, and salt to a saucepan over medium heat.
- Bring to a gentle simmer; cook 10–15 minutes, stirring occasionally, until glossy and spoonable.
- Remove from heat. Stir in vanilla. Cool.
Sweetener swaps: honey (use ~6 Tbsp), maple syrup (use ~⅓–½ cup).
