Plum Cranberry – Compote

Yield: ~1½–2 cups | Time: ~20 minutes

Ingredients

  • 1 lb plums, pitted and sliced thin with skin on
  • ½ cup honey
  • 1 cup dried cranberries
  • 2 Tbsp lemon juice
  • ½ tsp sea salt
  • 1 tsp vanilla extract or ½ vanilla bean (seeds scraped)

Method

  1. Add plums, honey, cranberries, lemon juice, and salt to a saucepan over medium heat.
  2. Bring to a gentle simmer; cook 10–15 minutes, stirring occasionally, until glossy and spoonable.
  3. Remove from heat. Stir in vanilla. Cool.

Sweetener swaps: honey (use ~6 Tbsp), maple syrup (use ~⅓–½ cup).
